MIZITHROPITES THE CRETAN GOAT CHEESE PIES

In the Cretan kitchen all foods based on Goat cheese (Chevre cheese) called “Mizithra” (salted, sour or unsalted) are very popular.
One of them are the “Mizithropitakia” little semicircular Mizithra cheese pies considered more as dessert which are fried and thanks to the imagination of the Cretan women the result in these little cheese pies is as pretty as it is savoury!
There are many ways of preparing these cheese pies and according the region having different names as well as “kalitsounia”, “nerates mizithropites “ , “agnopites”, “sarikopites”, “sfakianopites” depending the shape they give but here we follow one of them the kalitsounia from Heraklion region.
We serve them with honey or sugar and cinnamon

I don’t believe you can find in the USA the Cretan Mizithra but you can easily find the fresh Goat cheese(Chevre cheese) in many shapes and sizes, and varying in texture and taste. Fresh goat cheese should look moist.
Searching on the web I found that Goat cheese is being used in the kitchens of some of the most famous restaurant in the U.S., as Americans have enthusiastically embraced the taste of goat cheese in their favourite dishes, including pizza, ravioli, sauces, and appetizers.
Additionally when compared to cow's milk products like cream cheese, goat cheese is lower in fat, calories and cholesterol. It also provides more calcium and fewer carbohydrates than cream cheese.
